Ingredients:
- 3 large eggs
- 1/4 cup milk (or water for a lighter omelette)
- Salt and black pepper to taste
- 1 tablespoon butter or cooking oil
- 1/2 cup sliced mushrooms
- 1 cup fresh spinach leaves, washed and chopped
- 1/4 cup shredded cheese (such as Swiss, cheddar, or feta, optional)
- Chopped fresh herbs (parsley, chives, or thyme, optional, for garnish)
Instructions:
1. Prep the Filling:
- Heat a small skillet over medium-high heat and add a little butter or oil. Sauté the sliced mushrooms until they are tender and browned, about 5-6 minutes. Remove them from the skillet and set them aside.
- In the same skillet, add a bit more butter or oil if needed, and then add the chopped spinach. Sauté for 1-2 minutes until the spinach wilts. Remove it from the skillet and set it aside.
2. Whisk the Eggs:
- In a bowl, whisk together the eggs and milk (or water) until well combined. Season with a pinch of salt and black pepper.
3. Cook the Omelette:
- Heat an 8-inch non-stick skillet over medium-low heat. Add the remaining butter or oil and allow it to melt and coat the pan evenly.
- Pour the beaten egg mixture into the skillet and let it cook undisturbed for a minute or until the edges start to set.
4. Add the Filling:
- Sprinkle the sautéed mushrooms, wilted spinach, and shredded cheese (if using) evenly over one-half of the omelette.
5. Fold and Finish:
- Using a spatula, carefully fold the other half of the omelette over the filling, creating a half-moon shape. Press gently with the spatula to seal.
6. Serve:
- Slide the omelette onto a plate, sprinkle with chopped fresh herbs if desired, and serve hot.
Optional Variations:
- Feel free to customize your omelette with other ingredients like diced tomatoes, bell peppers, onions, or cooked bacon for added flavor and texture.
- Experiment with different types of cheese to suit your taste preferences.
- For a creamier omelette, you can add a dollop of cream cheese or goat cheese to the filling.
Enjoy your homemade Spinach and Mushroom Omelette for a delicious and nutritious breakfast or brunch!
